The weather, here in Rhode Island, has taken on a decidedly chilly disposition. Soups and stews have warmed us this week, as has many a mug of hot chocolate. Squash and apple soup served with zucchini fritters, sweet potato and chicken curry, African ground nut stew topped with bananas and coconut and lentil and vegetable soup were all eaten and approved of. Hot apple and cranberry crumble accompanied movie night.
The first real threat of frost was forecast for this week and with it came a mad dash to bring in everything left in the garden that wouldn't survive if the temperatures dipped below the line. I harvested enough green tomatoes to make more green tomato curry sauce and froze more herbs. What to do with the eggplant? The three Black Beauty eggplants I planted were super producers and my freezer is already stocked with eggplant and eggplant based meals. We are done. Friends and family rejoice - eggplant is coming your way!
