In my kitchen this week



Today I am joining the Beauty That Moves Blog Hop, celebrating the food prepared and enjoyed in our kitchens over the last week.























The weather, here in Rhode Island, has taken on a decidedly chilly disposition.  Soups and stews have warmed us this week, as has many a mug of hot chocolate. Squash and apple soup served with zucchini fritters, sweet potato and chicken curry, African ground nut stew topped with bananas and coconut and lentil and vegetable soup were all eaten and approved of. Hot apple and cranberry crumble accompanied movie night.

The first real threat of frost was forecast for this week and with it came a mad dash to bring in everything left in the garden that wouldn't survive if the temperatures dipped below the line. I harvested enough green tomatoes to make more green tomato curry sauce and froze more herbs. What to do with the eggplant? The three Black Beauty eggplants I planted were super producers and my freezer is already stocked with eggplant and eggplant based meals. We are done. Friends and family rejoice - eggplant is coming your way!

  2. Beautiful pictures! Everything looks so colourful. That squash and apple soup looks and sounds amazing... do you have a recipe?

    1. The soup recipe is really simple.Cook a small chopped onion and a clove of garlic in butter until soft. Add 1 1/2 cups of chicken broth, 8oz cooked squash puree ( I used buttercup),1/2 tbsp. sugar, pinch of cinnamon. Add one peeled and chopped cooking apple. bring to a simmer, cover and cook ten minutes until the apple is soft. Using a stick blender, puree the soup until smooth. Add 1/2 cup of cream ( I used light) and reheat.

  3. Every one of your dishes look absolutely mouth watering! The sweet potato curry, the zucchini fritters and the apple and cranberry crumble are all things I'd like to try. Beautiful photos. Thank you. Susan

  4. Your menu hits the spot for me too.... only I haven't made any of those things. Arg! I do have a squash that I should use, and plenty of apples. How seasonal your kitchen looks!

    1. I am so delighted to have fall produce to cook with that I am quite the happy cook, right now and it has been so cold and wet in Rhode Island I'm craving comfort food and lots of it. Thanks for stopping by!

  6. Yes, we've been eating richly with this cooler weather, too, with soups and hot cocoa making daily appearances. We've had a couple dips here in southern VT, but we've still been covering a few of the garden beds on those cold nights. Sometime in the next week, we'll say good night to all but one bed that we'll try to keep winter greens going in. I have to be honest in that I have no idea what to do with eggplant. I grow it every year and end up doing the same thing every time: slice it, slather in cilantro marinade, and grill it. Delicious, but haven't found any other way to prepare it that the whole family likes.

    1. We are not a big fan of eggplant, either. I make lots of moussaka and eggplant parmesan. This year I found a great stuffed eggplant recipe and it was a perfect way to use up the end of summer veggies!
