Carrot Coconut Bread
A week or so ago I dug up thirteen pounds of carrots from my garden. Since then we have been enjoying the versatility of carrots in all their culinary forms. In other words, we've been eating a lot of carrots!
This quick bread makes a great breakfast or lunch box addition. It is not overly sweet and only calls for four tablespoons of butter. With plenty of carrots, apples and raisins, I think it is tasty, too. The bread is a beautiful deep yellow with flex of orange and the toasted coconut on the top makes it an attractive loaf. Carrot Coconut Bread
1 1/2 cup grated carrot
1/2 cup grated apple
1/2 cup raisins
1/4 cup shredded coconut, plus more to sprinkle
4 Tbsp. melted unsalted butter, cooled
2 eggs, beaten
2/3 cup brown sugar
1 cup all purpose flour
3/4 cup whole wheat flour
1tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
Raw cane sugar
Preheat the oven to 350 degrees F. Spray a 8x5 baking pan with non-stick spray.
In a large bowl, mix together the eggs and the sugar, then add the cooled melted butter. Add the carrots, apple raisins and coconut. Mix well.
In a smaller bowl, sift together the flours, cinnamon, baking powder, baking soda and salt.
Add to the wet ingredients and gently mix in until combined.
Spoon the mixture into the prepared pan and sprinkle with extra coconut and raw cane sugar.
Bake for 50 to 60 minutes until a tooth pick inserted in the center comes out clean.
Let cool for five minutes on a rack before removing from the pan.

I don't particularly like Carrot Bread (or Carrot Cake, either) but my Daughter LOVES both of those, so I made this (along with 2 other Quick Bread loaves) for her to serve when she was entertaining some friends this past weekend. I used a combination of Fuji and Granny Smith Apples, and (I was told) this loaf was the group's "most preferred" of the 3 loaves offered. At my suggestion, my Daughter set out some softened Butter, some softened Cream Cheese, and a Cheddar/Pimento/Olive Cheese Spread for "any who wanted". Given as much as she told me, her "gathering" was a success. :)
